Karen Smith is the face behind Runs on Plants RD. Karen is a graduate of the University of Delaware, where she also completed her dietetic internship. She has over 14 years of experience as a registered dietitian and has been a certified diabetes educator since 2017. Karen wants to share her nutrition knowledge, cooking skills, and personal experience as a mom, wife, and former omnivore who changed the way she eats and cooks for her family to improve her health and the health of her loved ones. Karen will meet you wherever you are on your journey to improving your health and help empower and support you in achieving your goals.
